Chicken Wings Two Ways
We have delightful packages of pasture-raised chicken wings. YES: wings that are guilt free – ethically raised on pasture with healthy fat. Oh, what a treat! Here are two variations for wing night: vinegar BBQ and a dry rub.
Vinegar BBQ Wings
Ingredients
Wings, as many as you want
Preparation
Prepare the Vinegar BBQ Sauce while you preheat your oven to 400°F. Line a baking sheet with aluminum foil (if you want easier clean-up) and then top with a grate (cooling rack, etc).
Toss with wings with enough sauce to coat.
Lay the wings on the grate in an even layer trying to keep the wings from touching one another. Bake in the preheated oven for 30-45 minutes, basting with sauce every 15 min or so.
Remove to a platter and serve with more of the BBQ sauce for dipping.
Dry Rub Wings
Ingredients
Chicken wings (the dry rub is for ~ 2 lb wings)
1 tablespoon olive oil
1 tablespoon sweet smoked paprika
1 teaspoon ground cayenne pepper (if you like hot wings)
2 teaspoons garlic powder or minced fresh garlic
1 1/2 teaspoons salt
1 1/2 teaspoons black pepper
Preparation
Preheat your oven to 400°F. Line a baking sheet with aluminum foil (if you want easier clean-up) and then top with a grate (cooling rack, etc).
Pat the chicken wings to dry them a bit and add them to a large bowl.
In a small bowl combine all dry ingredients and mix. Add the dry rub and olive oil to the wings and toss with your hands until everything is coated evenly in the spice mixture.
Lay the wings out on the grate in an even layer trying to keep the wings from touching one another. Bake in the preheated oven for 45 minutes.
Remove to a platter and serve with your favourite sauce for dipping.
